Christmas table decoration and stuffed chicken


1 whole higher-welfare chicken, approximately 1.5kg


300 g mixed minced meat

1 handful sun dried plums and raisins

1 handful pre-cooked chestnuts

1 free-range egg

sea salt

cinnamon powder

freshly ground black pepper

First make the stuffing: put in a bowl the minced meat, raisins, plums chestnut and stir. Season with olive oil, salt, pepper and cinnamon.

Preheat oven to 190°C. Rinse chicken cavities and fill the chicken with the stuffing. Tie the chicken to close the cavity.

Place th chicken in a large roasting pan. Season with salt and pepper ans put it in the oven.

Roast for nearly 2 hours. Every now and then pour the cooking liquid over the chicken.

When ready, serve with potatoes and rosemary.
